I have a tendency to over feed, so allow me to run it by the PROS.. I have a 900 pound stallion (LIGHT WORK) who spends most of his time grazing in a paddock with his stall door open. I feed twice a day, about a scoop of grain a feeding. Most recently, I began feeding alfalfa Cubes "which he loves" I give him three to four large feed scoops twice a day. Since he eating fresh grass most of the day - is this too much cubes?

Just My Opinion, I think you are feeding to much cubes. I have personally never used alfalfa cubes as part of a steady diet, only as treats, but that does not mean cubes can't be used that way. Your feeding program you described without the cubes seem enough to maintain your horse.
If you feel your horse needs the extra protein of alfalfa, it would be more natural and more economical to buy alfalfa hay, just consider that horses being fed alfalfa hay need more water to get rid of excess nitrogen consumed when fed this high-protein hay.
